Baked cheese broccoli bites (Print Version)

# Ingredients:

01 - 2 eggs to hold everything together
02 - 1 cup breadcrumbs for texture
03 - 2 cups finely chopped broccoli florets
04 - 1/3 cup Parmesan cheese, grated
05 - 1 1/2 cups cheddar cheese, shredded
06 - 1/2 tsp onion powder for flavor
07 - 1/2 tsp garlic powder for flavor
08 - Salt and pepper to season
09 - Cooking spray to grease the baking sheet
10 - 2 tbsp all-purpose flour for binding

# Instructions:

01 - Set your oven to 400°F (200°C). Steam the broccoli for about 3–5 min so it’s a little tender. Let it cool, then chop it super fine.
02 - Toss the broccoli, breadcrumbs, cheddar, Parmesan, eggs, and flour into a big bowl. Sprinkle in the garlic, onion, a bit of salt, and some pepper. Stir until it all sticks together.
03 - Take small chunks of the mix and roll them into little 1-inch balls. Lay them out on a greased or parchment-covered baking sheet.
04 - Pop it in the oven for 20–25 min until they’re golden. If you want them crispier, broil for a min or two but keep an eye on them.
05 - Let them rest for a bit, then enjoy while warm. Serve with ranch or marinara for dipping.

# Notes:

01 - For something different, add a little crushed red pepper to spice it up.
