Set your oven to 400°F (200°C). Steam the broccoli for about 3–5 min so it’s a little tender. Let it cool, then chop it super fine.

Toss the broccoli, breadcrumbs, cheddar, Parmesan, eggs, and flour into a big bowl. Sprinkle in the garlic, onion, a bit of salt, and some pepper. Stir until it all sticks together.

Take small chunks of the mix and roll them into little 1-inch balls. Lay them out on a greased or parchment-covered baking sheet.

Pop it in the oven for 20–25 min until they’re golden. If you want them crispier, broil for a min or two but keep an eye on them.

Let them rest for a bit, then enjoy while warm. Serve with ranch or marinara for dipping.
