If you didn’t grab pre-cut chicken, slice breasts into strips about an inch wide. Sprinkle some salt and pepper over them.

In one dish, beat the eggs until smooth. In a second dish, stir together breadcrumbs, Parmesan, garlic powder, paprika, onion powder, a pinch of salt, and pepper.

Dip each piece in the egg first, then roll it around in the breadcrumb mixture. Want it crunchier? Give it a second coating.

Warm up the oven to 400°F (200°C). Arrange coated strips on a baking sheet with a rack on top, and spray them lightly with olive oil spray.

Bake for 20-25 minutes, flipping them halfway through. They're done when they’re golden and reach an internal temp of 165°F (74°C).
