Blueberry Baked Oats (Print Version)

# Ingredients:

01 - 1 teaspoon cinnamon (optional)
02 - 2¼ cups old-fashioned oats
03 - 1 teaspoon baking powder
04 - ¼ teaspoon salt
05 - 1¼ cup milk
06 - ⅓ cup maple syrup
07 - 2 large eggs
08 - 3 tablespoon melted coconut oil (or butter)
09 - 2 teaspoon pure vanilla extract
10 - ¾ cup fresh or frozen blueberries (frozen ones often taste sweeter)

# Instructions:

01 - Start by setting your oven to 350°F. Get out an 8x8 baking dish and either grease it lightly or lay down some parchment paper so it doesn’t stick.
02 - Dump the oats, baking powder, salt, and cinnamon into a large mixing bowl. Stir it all up until it looks even.
03 - Mix in the milk, maple syrup, eggs, vanilla, and melted oil. Stir thoroughly—it might seem a bit watery, but that’s totally normal!
04 - Carefully mix about ½ cup of the blueberries into the batter. Pour it into your prepared pan and scatter the rest of the blueberries over the top.
05 - Bake for 35-40 minutes, or until the middle is firm when you press it. Let it sit in the pan for a few minutes to cool off before slicing and serving.

01 - Fresh blueberries work fine, but frozen ones bring out extra sweetness.
