Beef Corn Enchilada (Print)

Juicy beef, melty cheese, and corn tortillas come together in a zesty, oven-baked dish. This is your go-to when you're short on time.

# Ingredients:

→ Beef mix

01 - 1 tablespoon olive oil
02 - 1 teaspoon salt
03 - 1 teaspoon chili powder
04 - 1 teaspoon ground cumin
05 - 2 cloves garlic, chopped up
06 - 1 medium onion, chopped fine
07 - 500 grams ground beef

→ To put together

08 - 200 grams shredded cheese (cheddar or Mexican blend)
09 - 600 milliliters enchilada sauce
10 - 12 corn tortillas

# Steps:

01 - Let things sit for a few minutes before you cut and pass it out.
02 - Slide your dish into the hot oven. Let everything cook for 20 to 25 minutes. Stop once the cheese is bubbling and slightly brown.
03 - Just keep building with more beef, sauce, cheese, and tortillas. When you run out, pour extra sauce over the top and toss on extra cheese.
04 - Lay down tortillas first in your baking dish. Scoop over some beef mix. Drizzle on some enchilada sauce and cover that with some cheese.
05 - Warm up olive oil in a skillet on medium. Toss in your chopped onion and stir till it’s soft. Add the chopped garlic—give it a minute. Put the ground beef in and break it up while you go. Sprinkle in the cumin, chili powder, and salt. Keep stirring until the meat is browned and cooked through.
06 - Turn on your oven to 190°C and wait till it’s ready.
