# Ingredients:

→ Main Ingredients

01 - 3 medium potatoes, peeled and chopped into cubes
02 - 1 lb of ground beef
03 - 1 onion, chopped finely
04 - 1 bell pepper (red), diced
05 - 3 garlic cloves, chopped or crushed
06 - 2 tablespoons of olive oil
07 - 1 teaspoon of ground cumin
08 - 1 teaspoon of smoked paprika
09 - Salt and black pepper to your liking
10 - 1/4 cup of water or beef stock (optional)
11 - Chopped green onions or spring onions for topping

# Instructions:

01 - Grab a deep skillet or Dutch oven. Add olive oil and heat it gently on medium.
02 - Toss in diced onions and minced garlic. Stir and cook for 2–3 mins till the onions turn soft and smell amazing.
03 - Crumble in the ground beef and stir while cooking. Let it brown nicely—should take around 5–7 minutes.
04 - Throw in the diced red pepper and potato chunks. Add paprika, cumin, salt, and pepper. Stir it all together well.
05 - Add a splash of broth or water if you need to soften the mix. Cover with a lid and simmer for 15–20 minutes. Stir now and then to avoid sticking.
06 - Take off the lid once the potatoes are tender. Cook for a little longer to dry out any extra liquid.
07 - Check the seasoning. Add more salt or pepper if needed to get the taste just right.
08 - Sprinkle some green onions on top and serve with bread or a salad. Dig in and enjoy!

# Notes:

01 - For a healthier choice, swap in ground turkey, chicken, or veggie crumbles instead of beef.
02 - Add in some zucchini, spinach, or shredded carrots to bring in more color and nutrients.
03 - Store extras in freezer-safe containers for up to 3 months. Defrost in the fridge overnight before warming them up.
