Combine the cracker crumbs, melted butter, and sugar in a bowl. Press this mixture into the bottom of the pan firmly to make a flat crust.

Using a big bowl, whip the cream cheese until it’s soft and fluffy. Toss in sugar and vanilla, and beat them until smooth.

One at a time, crack an egg into the bowl, blending well before adding the next. This keeps things silky smooth.

Fold in the sour cream to make the mixture creamy. Pour everything over your crust in the pan.

Arrange your fruit on top of the batter however you like – you can get creative here.

Bake until the middle is almost set, around 50-60 minutes. Let the cake cool off completely, then chill it in the fridge for at least 4 hours before eating.
