Summer Fruit Cheesecake (Print)

# Ingredients:

01 - 1/4 cup granulated sugar
02 - 1 1/2 cups crushed graham crackers
03 - 1/2 cup butter, melted

04 - 24 oz softened cream cheese
05 - 3 large eggs
06 - 1 cup thick sour cream
07 - 1 cup white sugar
08 - 1 tsp pure vanilla

→ Fruit Topping

09 - 2 peaches, sliced up
10 - 1 cup fresh berries of your choice (like raspberries or blueberries)

# Steps:

01 - Set your oven to 325°F. Use grease on a 9-inch springform pan so the cake doesn’t stick when you take it out.
02 - Combine the cracker crumbs, melted butter, and sugar in a bowl. Press this mixture into the bottom of the pan firmly to make a flat crust.
03 - Using a big bowl, whip the cream cheese until it’s soft and fluffy. Toss in sugar and vanilla, and beat them until smooth.
04 - One at a time, crack an egg into the bowl, blending well before adding the next. This keeps things silky smooth.
05 - Fold in the sour cream to make the mixture creamy. Pour everything over your crust in the pan.
06 - Arrange your fruit on top of the batter however you like – you can get creative here.
07 - Bake until the middle is almost set, around 50-60 minutes. Let the cake cool off completely, then chill it in the fridge for at least 4 hours before eating.
