Blueberry Cheese Rolls (Print Version)

# Ingredients:

→ Filling Prep

01 - 1 cup blueberries (frozen or fresh)
02 - 8 oz cream cheese, softened
03 - 1 tsp vanilla extract
04 - 1/4 cup sugar (granulated)

→ Putting It All Together

05 - Egg roll wrappers (8 to 10)
06 - 1 beaten egg (for sealing edges)
07 - Oil made for frying, like vegetable

→ Toppings or Extras

08 - Dusting of powdered sugar
09 - Optional: whipped cream, honey, or maple syrup

# Instructions:

01 - Blend the cream cheese with sugar and vanilla until smooth. Stir the berries in gently at the end so you don’t mash them up.
02 - Lay an egg roll wrapper down in a diamond shape. Add 2-3 spoonfuls of filling in the middle. Fold the lower corner up over the filling, then tuck the sides inward. Roll tightly toward the top and seal up with the egg wash.
03 - Pour about 2 inches of frying oil into a deep pan, heating until 350°F. Check the temperature with a thermometer for accuracy.
04 - Drop 2-3 rolls into the heated oil at a time. Cook on each side for 2-3 minutes, or until golden and crispy. Remove and set them on paper towels to cool.
05 - While still warm, sprinkle with powdered sugar. Serve alongside whipped cream, honey, or syrup if you’re feeling fancy.

# Notes:

01 - Bake them at 400°F for 15-20 minutes if you want to cut back on frying.
02 - An air fryer works like a charm at 375°F for about 8-10 minutes.
03 - These can be prepped a day in advance and stored in the fridge.
