chicken pasta tomatoes (Print)

Chicken that's juicy, pasta, ripe tomatoes, and fresh basil come together for a bold main dish.

# Ingredients:

→ Spices and Oils

01 - Salt and pepper, as much as you like
02 - 1 tablespoon balsamic vinegar
03 - 3 tablespoons olive oil
04 - 3 garlic cloves, minced

→ Fresh Veggies & Herbs

05 - 1 cup fresh basil, chopped
06 - 2 cups diced fresh tomatoes

→ Pasta

07 - 340 grams pasta like penne or fusilli

→ Chicken & Protein

08 - 2 medium chicken breast fillets (about 450 grams)

# Steps:

01 - Combine those juicy grilled chicken strips and tomato goodness with your pasta. Scoop onto plates while it's still hot. If you want, toss on some more fresh basil or Parm on top.
02 - Stir the chopped tomatoes, leftover basil, the rest of the garlic, a splash of balsamic, and some olive oil together in a bowl.
03 - Drop your pasta in plenty of salted boiling water and cook till it has a bite (al dente). Drain, then toss it right away with a spoonful of olive oil.
04 - Let the chicken soak for about half an hour in 1 tbsp olive oil, salt, pepper, one clove of minced garlic, and 60 ml chopped basil. Then grill it on medium until the inside hits 74°C. Slice it up.

# Notes:

01 - To make it creamy, try tossing in some avocado or mozzarella. Keep leftovers fresh in an airtight box in the fridge for up to 2 days—gently reheat when you're ready to eat.
