Sweet Butterscotch Pudding (Print)

A warm, rich dessert loaded with butterscotch flavor and topped with a gooey sauce. Perfect for using those extra biscuits.

# Ingredients:

01 - Butterscotch sauce for drizzling on top.
02 - 8 biscuits, if they're a bit stale, that's perfect.
03 - 1 cup of butterscotch baking chips.
04 - 1 packet instant butterscotch pudding.
05 - 4 eggs, large ones work best.
06 - 2 teaspoons pure vanilla extract.
07 - 1/2 cup of packed brown sugar.
08 - 2 cups full-fat milk.
09 - Vanilla ice cream for serving alongside.

# Steps:

01 - Turn your oven to 350°F and grease a square 8x8 dish. Tear up the biscuits and scatter them evenly inside the dish.
02 - In a bowl, whisk together the pudding packet, milk, eggs, sugar, and vanilla until smooth. Pour this creamy mix all over the biscuits.
03 - Push down the biscuits with a spoon or your hands, making sure they soak up the liquid. Leave it to rest for about 10 minutes.
04 - Scatter the butterscotch chips over the top and bake for about 40 minutes. Check that it's golden and cooked through.
05 - Scoop it up warm, and add a drizzle of butterscotch sauce. A scoop of ice cream on the side is a nice touch.
