Cherry Pie Bars (Print)

These cherry-filled dessert bars have a soft shortbread crust, fruity layers, crunchy topping, and almond-flavored drizzle.

# Ingredients:

01 - 1 tsp baking powder.
02 - 3 cups plain flour.
03 - 1-2 Tbsp milk.
04 - 1 cup powdered sugar.
05 - ½ tsp salt.
06 - 1 large egg.
07 - 1 cup butter, softened.
08 - 1 cup white sugar.
09 - 1 tsp almond extract, split.
10 - 1 (21 oz) can of cherry pie filling.

# Steps:

01 - Set the oven to 375°F. Either grease a 13x9-inch pan or line it with parchment.
02 - Combine sugar, salt, flour, and baking powder in your stand mixer.
03 - Toss in butter, a spoonful at a time, until it becomes crumbly.
04 - Blend in the egg, stopping when the dough is still crumbly.
05 - Take ½ to ⅔ of the dough and press it over the bottom of the pan.
06 - Pop it into the oven for 10-12 min until it’s golden and not shiny.
07 - Blend ½ tsp almond extract with the cherry pie filling.
08 - Spread the cherry mix over the warm base layer evenly.
09 - Sprinkle the rest of the dough on top of the cherries.
10 - Bake everything for 25-30 min until the top browns and it’s bubbly.
11 - Let it cool down to room temp completely on a wire rack.
12 - Stir together the powdered sugar, milk, and the rest of the almond extract.
13 - Pour the glaze over the cooled bars. Let it firm up before slicing.

# Notes:

01 - Vanilla extract can take the place of almond extract if needed.
02 - Squeeze crumb topping in your hands for larger chunks before sprinkling.
