Cabbage with Noodles (Print Version)

# Ingredients:

01 - 6 ounces smoked sausage (sliced into 1-inch bits)
02 - 1 head cabbage (about 2 pounds), core discarded and chopped into 1½-inch pieces
03 - 2 cloves garlic, finely chopped
04 - 8 ounces of wide, flat no-yolk noodles, uncooked
05 - 1 teaspoon spicy brown or Dijon mustard, use only if you'd like
06 - 6 tablespoons salted butter, divided up
07 - 1 big yellow onion (roughly 2 cups), diced
08 - 1/2 teaspoon sea salt
09 - 1/2 teaspoon freshly cracked black pepper

# Instructions:

01 - Get a big pot of salty water boiling. Toss in the noodles and cook till they're just slightly firm. Make sure they're well drained, then set aside.
02 - Melt 2 tablespoons of butter in a nonstick deep pan on medium-high heat. Cook the kielbasa for about 3 minutes until it's browned nicely and crispy. Scoop it out with a slotted spoon and set it to the side.
03 - Using the same pan, add leftover sausage fat along with onions, cabbage, garlic, and 2 more tablespoons of butter. Turn heat to medium and cook, stirring, until the cabbage softens, which takes around 8 minutes.
04 - Stir your cooked noodles and sausage pieces back into the cabbage mix. Toss until everything is well mixed and warmed up.
05 - Stir in the last 2 tablespoons of butter, along with mustard if you'd like, salt, and pepper. Serve it up right away.
