Creamy Cajun Chicken (Print)

This one-pan favorite mixes tender chicken, pasta, and a creamy tomato sauce with Cajun spices. Done in 30 minutes.

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 tablespoon butter.
03 - 1 pound boneless skinless chicken breast.
04 - 1 yellow onion, diced.
05 - 1/2 pound penne pasta.
06 - 1 can (15 oz) fire roasted diced tomatoes.
07 - 2 cups chicken broth.
08 - 2 ounces cream cheese.
09 - 3 green onions, sliced.
10 - 2 teaspoons smoked paprika.
11 - 1 teaspoon thyme.
12 - 1 teaspoon oregano.
13 - 1/2 teaspoon garlic powder.
14 - 1/2 teaspoon onion powder.
15 - 1/4 teaspoon salt.
16 - 1/4 teaspoon black pepper.
17 - 1/4 teaspoon cayenne pepper.

# Steps:

01 - Combine all the Cajun spices in a bowl and stir well.
02 - Cut chicken pieces into chunks, then coat them generously in the spice mix.
03 - Melt butter with oil in a large pan over medium heat.
04 - Cook the chicken cubes on each side until golden brown.
05 - Toss diced onion into the pan, cooking for around 2 minutes until soft.
06 - Pour in the chicken broth, canned tomatoes (with their juices), and throw in the pasta.
07 - Let everything come to a boil, then lower the heat, cover, and cook gently for 10 minutes.
08 - Give it a stir now and then, ensuring the pasta doesn’t stick, and cook until tender.
09 - Once pasta is done, stir in the cream cheese until it’s fully melted and mixed.
10 - Sprinkle sliced green onions over the top and dig in.
