Set your oven to 375°F (190°C). Coat a baking dish lightly with oil or cooking spray so nothing sticks.

Rub the chicken dry with paper towels. Sprinkle generously with a mix of onion powder, garlic powder, Italian seasoning, salt, and pepper.

In a large, hot skillet, heat olive oil until it shimmers. Place the chicken in the pan and cook each side for about 2-3 minutes until golden. Move them to a plate when done.

Using the skillet you just used, pour in the chicken stock and add the softened cream cheese. Keep whisking until the mixture is smooth and creamy. Stir in Parmesan cheese. Cook for a few minutes until it thickens a little and taste to adjust seasoning.

Arrange the browned chicken in your greased baking dish, then pour the creamy sauce over the top. Bake for around 25-30 minutes, making sure the internal temperature hits 165°F.

Scatter chopped parsley over the dish for an extra touch of flavor. Serve right away while it's hot and bubbling.
