Cheesy Beef Street Tacos (Print Version)

# Ingredients:

→ Beef Prep

01 - 1 tbsp lime juice
02 - 1 tbsp taco seasoning
03 - Salt and pepper, as you like
04 - 1 lb flank or skirt steak

→ Cheesy Sauce

05 - 1/4 cup sour cream
06 - 1 tbsp lime juice
07 - 2 tbsp mayo
08 - 1/2 cup cheddar, grated

→ Toppings and Tortillas

09 - Fresh cilantro, 1/4 cup, finely chopped
10 - 4 small soft flour tortillas

# Instructions:

01 - Rub the steak with taco seasoning and some salt. Add lime juice, sprinkle some pepper, and leave it to sit for around 10-15 minutes.
02 - Set a skillet to medium-high heat. Cook the meat for 3-4 minutes on each side. Remove it, give it 5 minutes to rest, then slice thinly across the grain.
03 - In a bowl, toss in sour cream, mayo, cheddar, and lime juice. Stir everything together till it's creamy.
04 - Heat each tortilla in a dry pan over medium heat. Flip after 30 seconds so they soften up.
05 - Pile the beef on the tortillas, drizzle with the sauce, and top with freshly chopped cilantro.

01 - Cutting the meat across the grain gives you a more tender bite
02 - Crank up the heat for your skillet to get that nice char
03 - A blend of Mexican cheeses can bring out extra layers of flavor
