Rub the steak with taco seasoning and some salt. Add lime juice, sprinkle some pepper, and leave it to sit for around 10-15 minutes.

Set a skillet to medium-high heat. Cook the meat for 3-4 minutes on each side. Remove it, give it 5 minutes to rest, then slice thinly across the grain.

In a bowl, toss in sour cream, mayo, cheddar, and lime juice. Stir everything together till it's creamy.

Heat each tortilla in a dry pan over medium heat. Flip after 30 seconds so they soften up.
