# Ingredients:

01 - Chicken thighs with the skin and bones still on.
02 - Sliced red and green bell peppers.
03 - Chopped onions.
04 - Garlic, finely minced.
05 - San Marzano-style crushed tomatoes.
06 - Chicken broth, low-sodium.
07 - Tomato paste for thickness.
08 - Basil, dried.
09 - Oregano, dried.
10 - Optional: red chili flakes for a little heat.
11 - Capers for a tangy kick.
12 - Chopped fresh parsley.
13 - Olive oil, extra virgin.

# Steps:

01 - Sprinkle salt and pepper on the chicken. Cook in hot oil for about 4-5 minutes on each side, so it turns golden brown.
02 - In the slow cooker, layer the sliced peppers, garlic, and onions. Put the browned chicken on top.
03 - Mix together the crushed tomatoes, broth, seasonings, and tomato paste. Pour over the chicken and toss in the capers.
04 - Cover the slow cooker. Let it go for 6-7 hours on low or 3-4 hours on high until the chicken softens.
05 - Before serving, sprinkle with fresh parsley for a pop of flavor and color.
