Creamy Chicken Slow Cooker (Print)

A rich and creamy dish featuring soft chicken, cheesy goodness, and spaghetti—all made easy in your slow cooker. Perfect for busy weeknights at home.

# Ingredients:

01 - 16 oz spaghetti.
02 - 2 cups Colby Jack cheese, shredded.
03 - 4 oz cream cheese, softened and cut into cubes.
04 - 1.5 lbs chicken breasts, skinless and boneless.
05 - 1 teaspoon black pepper, freshly cracked.
06 - 1.5 teaspoons kosher salt.
07 - 1 tablespoon garlic, finely minced.
08 - 1 teaspoon Italian herb blend.
09 - 1 teaspoon onion powder.
10 - 2 cans of condensed cream of chicken soup (10.5 ounces each).
11 - One 10-ounce can of diced tomatoes with green chilies.
12 - Optional: Chopped fresh parsley for decoration.

# Steps:

01 - Line or lightly coat the inside of a 6 to 7-quart slow cooker with spray oil.
02 - Place chicken in the cooker. Sprinkle on Italian seasoning, garlic, onion powder, salt, and pepper.
03 - Mix diced tomatoes and the soups together in a separate bowl. Pour this over the chicken and cook for 4 hours on high or 6 hours on low.
04 - Remove chicken from cooker and shred it into pieces. Add the cream cheese and shredded cheese to the cooker, stir, and leave for another 30 minutes covered.
05 - Boil spaghetti as per the instructions on its packaging, then drain and rinse with cool water.
06 - Give the creamy cheese sauce a good stir. Toss in the shredded chicken and spaghetti, coating everything evenly.

# Notes:

01 - Avoid baking the pasta too long, or it'll lose its firmness.
02 - Using chicken thighs is a tasty substitution.
03 - Angel hair pasta or other thin noodles are great options too.
