Lemon Chicken Soup (Print)

Cozy soup with tender chicken, pasta, veggies, and a punch of lemon.

# Ingredients:

→ Vegetables

01 - Minced garlic
02 - Chopped onion
03 - Finely diced carrots
04 - Finely diced celery

→ Base

05 - Chicken stock
06 - Uncooked orzo
07 - Raw chicken breasts

→ Seasonings

08 - Freshly squeezed lemon juice
09 - Seasoning mix (Italian)
10 - Unsalted butter
11 - Olive oil
12 - Chopped fresh parsley
13 - All-purpose flour

# Steps:

01 - Pour in orzo, stir every now and then, and keep cooking uncovered for 10 minutes.
02 - Tear chicken into pieces, then toss in lemon, parsley, and spices.
03 - On medium heat, cook carrots, onions, and celery in a mix of butter and oil for 5-7 minutes.
04 - Stir in minced garlic and flour. Add the broth, throw in the chicken, and let it simmer for 15 minutes.

# Notes:

01 - Give the orzo a stir often so it doesn’t stick.
02 - Add more broth if reheating leftovers.
03 - Thighs can swap in for chicken breasts.
