Pineapple Chicken Rice (Print Version)

# Ingredients:

01 - 1 cup pineapple chunks
02 - 1 pound cubed chicken breast

03 - 1/4 cup sliced green onions
04 - 1 red bell pepper, chopped
05 - 2 minced garlic cloves
06 - 1 onion, diced
07 - 1 teaspoon grated ginger

→ Pantry

08 - 1 tablespoon sesame seeds
09 - 2 cups of chicken stock
10 - 1 tablespoon olive oil
11 - A dash of salt and pepper
12 - 1 tablespoon soy sauce
13 - 1 cup uncooked jasmine rice

# Instructions:

01 - Warm up olive oil in a big skillet on medium heat. Toss in the chicken pieces and cook them until they turn a nice golden shade.
02 - Soften the onion, garlic, and red bell pepper by sautéing them. Stir in the pineapple and let it cook for another two minutes.
03 - Add the rice, stock, soy sauce, ginger, and a sprinkle of salt and pepper. Let it boil, then turn the heat low, cover, and let it simmer for 18-20 minutes.
04 - Put the chicken back in the skillet, combine everything well. Sprinkle green onions and sesame seeds on top before serving.
