Fudgy Brownie Oats (Print Version)

# Ingredients:

01 - ½ cup Dutch cocoa powder
02 - 2 cups rolled oats
03 - ¼ teaspoon salt
04 - 1 teaspoon baking powder
05 - ⅓ cup maple syrup
06 - 2 large eggs, whisked
07 - 1¼ cup milk of choice
08 - 3 tablespoons coconut oil (melted) or softened butter
09 - 2 teaspoons vanilla extract
10 - ½ cup semi-sweet chocolate chips, plus extras to sprinkle on top
11 - Optional: sea salt flakes and melted chocolate for garnish

# Instructions:

01 - Set your oven to 350°F. Line an 8x8 pan with parchment paper or give it a quick spray with non-stick spray.
02 - In a bowl that’s big enough, stir the oats, salt, cocoa powder, and baking powder until it’s evenly blended.
03 - Mix in the eggs, vanilla, syrup, milk, and melted oil or butter. Stir until smooth and lump-free.
04 - Throw in your chocolate chips and gently mix them through. Pour this batter into your prepared pan and sprinkle a little extra chocolate on top.
05 - Bake it for 30 to 40 minutes, until the center feels firm when lightly touched. Cool slightly before serving.
06 - If you want to jazz it up, drizzle melted chocolate over the top. Add a pinch of flaky sea salt to round out the flavors.

# Notes:

01 - These chewy oat bars are a make-ahead breakfast you can warm up during busy mornings.
02 - Dutch cocoa makes the chocolate flavor deeper than if you use regular cocoa.
03 - For a fun twist, serve warm with yogurt or even a little ice cream on top.
04 - Make them dairy-free by switching to plant-based milk and chocolate chips.
