Melt the peanut butter, honey, and coconut oil in a medium-sized saucepan over medium-low heat. Stir frequently as the mixture melts.

Remove the saucepan from the heat and add the chocolate chips and vanilla extract. Stir until the mixture is completely smooth.

Add the rolled oats, shredded coconut, and chopped pecans to the mixture. Stir to combine thoroughly.

Pour the mixture into an 8×8 pan. Refrigerate for at least 3-4 hours until the chocolate hardens.

Slice into 1″-2″ square pieces. Store in the refrigerator before serving.

Stir and microwave for an additional 90 seconds until the chocolate has almost melted. Stir until smooth, then add the remaining ingredients and proceed as above.
