No-Bake Chocolate Peanut Butter Bars (Print Version)

01 - 1 cup peanut butter
02 - ½ cup honey
03 - ½ cup coconut oil
04 - 1¼ cups dark or semi-sweet chocolate chips
05 - 1 teaspoon vanilla extract
06 - 2 cups rolled oats
07 - 1 cup shredded coconut
08 - ½ cup chopped pecans

# Instructions:

01 - Melt the peanut butter, honey, and coconut oil in a medium-sized saucepan over medium-low heat. Stir frequently as the mixture melts.
02 - Remove the saucepan from the heat and add the chocolate chips and vanilla extract. Stir until the mixture is completely smooth.
03 - Add the rolled oats, shredded coconut, and chopped pecans to the mixture. Stir to combine thoroughly.
04 - Pour the mixture into an 8×8 pan. Refrigerate for at least 3-4 hours until the chocolate hardens.
05 - Slice into 1″-2″ square pieces. Store in the refrigerator before serving.
06 - Combine the peanut butter, honey, coconut oil, chocolate chips, and vanilla extract in a large glass mixing bowl. Microwave for 90 seconds at high power. Stir and microwave for an additional 90 seconds until the chocolate has almost melted. Stir until smooth, then add the remaining ingredients and proceed as above.
