Gooey Cinnamon Muffins (Print)

Fluffy muffins packed with cinnamon flavor and a creamy filling, perfect for mornings or sweet cravings.

# Ingredients:

→ Dry Ingredients

01 - 1 teaspoon ground cinnamon
02 - 1/2 teaspoon salt
03 - 1 tablespoon baking powder
04 - 1 cup granulated sugar
05 - 2 cups all-purpose flour

→ Wet Ingredients

06 - 1 cup milk
07 - 1 teaspoon vanilla extract
08 - 2 large eggs
09 - 1/2 cup unsalted butter, melted

→ Cream Cheese Filling

10 - 1/4 cup powdered sugar
11 - 8 oz cream cheese, softened

→ Toppings

12 - Optional: 1/4 cup white chocolate, melted (for drizzle)
13 - 1 tablespoon cinnamon sugar mixture (for topping)

# Steps:

01 - Turn on the oven to 375°F (190°C) and get a muffin tin ready with paper liners. It makes cleanup way simpler!
02 - Use a big bowl to mix flour, sugar, cinnamon, baking powder, and salt. Stir them up until they're evenly spread out.
03 - Grab another bowl and start blending the melted butter, milk, eggs, and vanilla. Make sure everything is mixed nicely.
04 - Pour the wet mix into the dry mix and gently fold them together. Stop once it’s combined—don’t mix like crazy, or the muffins will turn out too firm.
05 - In a smaller bowl, beat the cream cheese with powdered sugar until it’s completely smooth and creamy.
06 - Scoop some batter into each liner, filling halfway. Add a small scoop of cream cheese in the center, then cover it completely with more batter. Sprinkle cinnamon sugar on top for flavor and crunch.
07 - Pop them into the oven for 18 to 20 minutes. They’re done when the tops are golden, and a toothpick poked into the muffin part comes out without batter.
08 - Let them cool in the pan for a few minutes, then move them to a rack to finish cooling. Want extra sweetness? Drizzle melted white chocolate over the top before serving.

# Notes:

01 - Make sure the cream cheese is soft before mixing it with powdered sugar to get a super smooth filling.
02 - Leave a little space in the liners—don’t fill to the top to avoid messy spills in the oven.
03 - For more cinnamon flavor, try swirling some cinnamon sugar right into the batter before adding the filling.
