In a big bowl, whip up the softened cream cheese until it's nice and creamy.

Toss in the pineapple, half of the coconut, the dry gelatin powder, and graham crumbs. Stir until it all mixes together.

Chill the mix in the fridge for about an hour.

Scoop out spoonfuls and roll into small balls. Cover each one with the leftover coconut.
