Avocado Chicken Melt (Print)

A delicious sandwich with perfectly cooked chicken, creamy avocado, and melted cheese sandwiched between toasted bread. Ideal for lunch or quick dinners.

# Ingredients:

01 - 4 bread slices (pick sourdough, ciabatta, or your favorite)
02 - Salt and pepper, as needed
03 - 1 avocado, sliced into pieces
04 - 4 cheese slices (cheddar, provolone, or Swiss)
05 - Butter or olive oil for grilling sandwiches
06 - 2 tablespoons of mayo
07 - 1 tablespoon Dijon-style mustard
08 - 2 skinless, boneless chicken breasts
09 - 1 small red onion, in thin slices
10 - 1 tomato, cut into slices
11 - 1 tablespoon olive oil for cooking chicken

# Steps:

01 - Give the chicken a good sprinkle of salt and pepper. Add olive oil to a skillet and set it over medium-high. Fry the chicken for 6-7 minutes per side until it's fully cooked. Let it sit for a moment, then slice it nice and thin.
02 - Cut the avocado into slices and have the cheese ready to go. Set those aside for now.
03 - Spread mayo on one side of each slice of bread and add a thin layer of Dijon mustard for extra flavor.
04 - On two pieces of bread, layer up sliced chicken, rounds of avocado, cheese slices, red onion, and tomato. Place the other slices of bread on top, mayo side facing down.
05 - Warm butter or oil in a skillet over medium. Cook the sandwiches, gently pressing them with a spatula, for about 3-4 minutes per side until golden brown and gooey inside.
06 - Take the sandwiches out of the pan, let them cool a tad, slice them in half, and dig in!

# Notes:

01 - You can use leftover or rotisserie chicken instead.
02 - Stash extras in an airtight box or bag.
03 - For crispy results, reheat in a toaster oven.
