Mix water and gelatin in a small dish, then leave for 5 minutes to thicken.

In a pan, warm the cream, milk, sugar, vanilla, and a pinch of salt. Stir until everything's combined and the sugar's melted.

Take the pan off heat. Add the softened gelatin and whisk till it’s all incorporated.

Pour the liquid into jars or glasses, then pop them in the fridge for six hours or more.

Add fruit and mint on top if you’d like. Serve it cold.
