Chops with Bacon Gravy (Print Version)

# Ingredients:

→ Pork Chops Essentials

01 - 4 pork chops with bone, roughly 1/2 inch thick
02 - 1 teaspoon black pepper
03 - 1/2 teaspoon salt
04 - 1 cup plain flour
05 - 1 teaspoon garlic powder
06 - 1 teaspoon paprika
07 - 1 teaspoon onion powder
08 - 1/4 cup milk
09 - 2 eggs, large
10 - Oil for frying, like vegetable oil

→ Gravy Ingredients

11 - 4 pieces of bacon, diced
12 - 3 tablespoons saved bacon grease
13 - 3 tablespoons plain flour
14 - 2 cups full-fat milk
15 - Salt and pepper as needed

# Instructions:

01 - In one bowl, combine the flour, pepper, onion powder, garlic powder, paprika, and salt together. Whisk eggs and milk together in a second bowl.
02 - Dunk the pork chop in the flour mix, coat in the egg wash, then cover it in the flour mix again. Do this for each one.
03 - In a pan over medium-high heat, heat oil. Fry each pork chop for about 3 to 4 minutes on both sides until golden, and the inside hits 145°F.
04 - Using the same pan, cook the diced bacon until crunchy. Put bacon aside but leave 3 tablespoons of the bacon grease in the pan.
05 - Add flour to the bacon grease, stirring for a minute. Slowly pour in milk, stirring nonstop until it thickens.
06 - Stir the bacon crumbles back into the gravy. Add more salt or pepper if needed, and serve the gravy over the pork chops while hot.
