Easy Frito Pie (Print)

Savory beef and beans baked with Fritos and cheese. A satisfying dish for busy evenings or casual get-togethers.

# Ingredients:

01 - 1 green onion, sliced thin.
02 - 1 can (15 oz) pinto beans, rinsed and drained.
03 - 1 small onion, finely chopped.
04 - 2 cups shredded cheese blend (Mexican-style works well).
05 - 1 bag (9.25 oz) Fritos corn chips.
06 - 1 can (10 oz) enchilada sauce.
07 - 2/3 cup water.
08 - 1 packet taco seasoning mix.
09 - 1 pound lean ground beef.
10 - Guacamole to serve on the side.
11 - Sour cream for added flavor.

# Steps:

01 - Set oven to 350°F and coat a 9x13 pan with a light spray of oil.
02 - Cook ground beef and onions in a roomy skillet until browned. Drain off grease.
03 - Toss in taco mix and water. Let it gently cook for a few minutes while stirring.
04 - Blend enchilada sauce and beans into the meat mixture until everything is even.
05 - Scatter 4 cups Fritos at the bottom of the dish, sprinkle on 1 cup shredded cheese, then pour the meat mixture on top. Add the rest of the cheese.
06 - Bake for about 18-20 minutes until everything is melty. Toss the extra Fritos on top after baking.

# Notes:

01 - Let it rest for a short while before digging in.
02 - Top it off with chopped green onions, sour cream, or guacamole.
03 - Keep some Fritos aside and sprinkle them right after baking for a great crunch.
