Get your oven going at 400°F. Lay parchment paper over a baking tray.

Coat the cauliflower with the oil and toss in salt and pepper. Wrap the garlic, drizzled with oil, in foil.

Bake the cauliflower and garlic for 30 to 35 minutes, flipping them halfway. Let them turn golden.

Chop the onion, then sauté it for about 5 to 8 minutes till it softens up nicely.

Combine the cooked onion, roasted veggies, broth, and seasoning. Blend everything together till it’s smooth.

Pour it back into your pot, stir in the cheese, and let it simmer for 10 to 15 minutes. Sprinkle your green onion and serve it up.
