Garlic Cauliflower Comfort Soup (Print Version)

# Ingredients:

01 - 1 garlic bulb.
02 - 3 tablespoons of olive oil.
03 - 1 full head of cauliflower.
04 - 1 medium onion, yellow.
05 - 4 cups of veggie stock.
06 - A pinch of black pepper.
07 - ½ teaspoon of table salt.
08 - 1 green onion, chopped.
09 - 1 cup shredded sharp cheddar.

# Instructions:

01 - Get your oven going at 400°F. Lay parchment paper over a baking tray.
02 - Coat the cauliflower with the oil and toss in salt and pepper. Wrap the garlic, drizzled with oil, in foil.
03 - Bake the cauliflower and garlic for 30 to 35 minutes, flipping them halfway. Let them turn golden.
04 - Chop the onion, then sauté it for about 5 to 8 minutes till it softens up nicely.
05 - Combine the cooked onion, roasted veggies, broth, and seasoning. Blend everything together till it’s smooth.
06 - Pour it back into your pot, stir in the cheese, and let it simmer for 10 to 15 minutes. Sprinkle your green onion and serve it up.

01 - Add milk if you want it creamier.
02 - Control the amount of broth to tweak thickness.
