Kielbasa Gnocchi Soup (Print Version)

# Ingredients:

01 - 3 cups of chicken broth.
02 - 2 cups water.
03 - 1 cup spinach, fresh.
04 - 1 cup heavy whipping cream.
05 - 1/2 cup chopped sun-dried tomatoes.
06 - 8 ounces of softened cream cheese.
07 - 16 ounces potato gnocchi.
08 - 1 tablespoon olive oil.
09 - 1 small onion, diced.
10 - 1 tablespoon Cajun spice mix.
11 - 1/2 teaspoon crushed black pepper.
12 - 1/2 teaspoon red chili flakes.
13 - 13.9 ounces kielbasa sausage, sliced.
14 - 2 tablespoons garlic, minced.
15 - Parsley for topping.
16 - Parmesan cheese to sprinkle on top.

# Instructions:

01 - In a pot, heat some olive oil and cook the kielbasa slices until they brown, flipping after 3-5 minutes per side.
02 - Toss the chopped onions and tomatoes into the pot. Let them cook for 3-5 minutes, then add garlic and cook just another minute.
03 - Pour in broth, water, cream, softened cream cheese, and spices. Stir everything until smooth and creamy.
04 - Drop the gnocchi into the pot. When they float to the top, after about 2-3 minutes, they're good to go.
05 - Stir in spinach and let it wilt. Ladle into bowls, then sprinkle with parsley and parmesan for a nice finish.
