Greek Chicken with Cucumber Salsa (Print Version)

# Ingredients:

→ For the Chicken

01 - 2 large chicken breasts
02 - 3 tablespoons olive oil
03 - 2 tablespoons minced parsley
04 - 1 tablespoon lemon juice
05 - 1 tablespoon minced garlic
06 - 1 teaspoon Italian seasoning
07 - 1/2 teaspoon salt
08 - 1/2 teaspoon paprika
09 - 1/4 teaspoon pepper

→ For the Cucumber Salsa

10 - 2 cups finely chopped cucumbers
11 - 1.5 cups chopped tomatoes
12 - 1/4 cup finely chopped red onion
13 - 1 tablespoon olive oil
14 - 1-2 tablespoons fresh lemon juice
15 - 1 tablespoon finely chopped dill
16 - 1 tablespoon finely chopped parsley
17 - Salt and pepper to taste

# Instructions:

01 - Place the chicken on the cutting board and carefully cut through it as if butterflying the chicken, but slice all the way through to create four thinner, more uniform chicken breasts.
02 - Combine olive oil, parsley, lemon juice, minced garlic, and spices. Pour the marinade over the chicken and chill for at least 1 hour or up to 24 hours.
03 - Heat a grill or grill pan to medium heat, approximately 375°F. Add the chicken and grill for 4-5 minutes on each side. Check for a temperature of 165°F using a meat thermometer.
04 - Remove the chicken from heat and allow it to rest for a few minutes.
05 - Combine cucumbers, tomatoes, red onion, olive oil, lemon juice, dill, and parsley in a bowl. Toss to evenly coat.
06 - Serve the grilled chicken with cucumber salsa alongside or on top. Optionally, garnish with feta and fresh lemon wedges.
