Dish it out hot and hand out that thick bread if you want.

Lay down the last of the potato slices. Spread the melted butter over top, then pour beef broth all over the layers.

Pull off the foil and paper. Pop it back in for another 15–20 minutes. You want those potatoes nice and crispy with a golden look.

Switch your oven to 180°C. Give your baking dish a quick swipe with melted butter.

Start with a layer of potatoes at the bottom, then pile on some onion, carrot, and a bit of corned beef. Sprinkle some salt and pepper. Do this twice more.

Put some parchment on the dish, then cover totally with foil. Bake for 50 minutes.
