Ham Lentil Crockpot Soup (Print Version)

# Ingredients:

→ Meat

01 - 2 cups ham, diced into chunks
02 - 6 slices bacon, chopped into bits

→ Veggies

03 - 2 medium carrots, chopped after peeling
04 - 1 medium onion, chopped finely
05 - 4 garlic cloves, crushed or minced
06 - 2 sticks celery, finely diced

→ Base

07 - 6 cups broth made from chicken
08 - 1 can (15 oz) tomato sauce
09 - 1.5 cups uncooked lentils, green or brown
10 - 1/2 teaspoon oregano (dried)
11 - 1/4 teaspoon flakes of red chili
12 - Season with as much salt and pepper as you'd like
13 - 1/2 teaspoon Italian mixed herbs

# Instructions:

01 - Cook the bacon pieces in a pan until they turn crunchy, around 10 minutes. Keep 1-2 tablespoons of the grease aside.
02 - Sauté the onion, celery, and carrots in the bacon fat for 5-7 mins. Stir in garlic for a short time after that.
03 - Put everything into the slow cooker. Use high heat for 3-4 hours or let it simmer on low for 6-8 hours.
04 - Taste and sprinkle on some salt and pepper before dishing up.

# Notes:

01 - Ham bones from leftovers work well in this
02 - Can also be made on the stovetop in about an hour if you'd prefer
03 - Add extra broth or water if you think it's too thick
