Preheat your oven to 350°F. Coat a 9x13 pan lightly with oil or butter.

Crumble sausage into a pan and cook till browned. Scoop out with a slotted spoon.

Using the same skillet, saute hash browns, peppers, and onions for about 5 minutes, until softened.

Combine eggs, milk, salt, and pepper in a bowl. Whisk well, then stir in the sausage, veggies, and 2 cups of the cheese.

Pour the mixture into your greased pan. Sprinkle the rest of the cheese on top and bake for 55 minutes, until fully set.
