Honey Buffalo Skewers (Print)

You’ll find juicy buffalo chicken, fresh corn off the grill, melty cheese, cilantro, and lots of crisp veggies in every hearty forkful.

# Ingredients:

→ For the Salad

01 - 1 ripe avocado, diced
02 - 6 slices cooked bacon, crumbled
03 - 120 g blue cheese, crumbled or cheddar, cubed
04 - 40 g peperoncini, chopped
05 - 165 g grilled corn kernels (from 2 ears of corn)
06 - 150 g cherry tomatoes, sliced
07 - 20 g fresh cilantro, finely chopped
08 - 420 g shredded lettuce
09 - 6 g freshly ground black pepper
10 - 1 tablespoon seasoned salt
11 - 900 g chicken breasts, cut into 2 cm cubes
12 - 2 tablespoons extra virgin olive oil
13 - 60 ml honey
14 - 160 ml buffalo sauce or hot sauce

→ For the Creamy Herb Dressing

15 - Freshly ground black pepper, to taste
16 - Kosher salt, to taste
17 - 1 teaspoon garlic powder
18 - 6 g fresh dill, chopped
19 - 8 g fresh basil, chopped
20 - 10 g fresh cilantro, coarsely chopped
21 - 85 g pickled jalapeños
22 - 75 g mayonnaise
23 - 120 g sour cream or plain Greek yogurt

# Steps:

01 - Pile the grilled chicken skewers right on top of the salad, sprinkle with the crumbled bacon, cubes of cheddar or blue cheese, and toss avocado bits over everything. Spoon out the leftover herb dressing and the honey buffalo sauce on the side if folks want extra.
02 - Add the lettuce, cilantro, tomatoes, corn, and peperoncini into a big bowl, drizzle in half of the creamy herb dressing, and gently mix everything together.
03 - Pop the sour cream or Greek yogurt, mayo, pickled jalapeños, cilantro, basil, dill, a sprinkle of garlic powder, a shake of salt, and pepper into your blender. Give it a whirl till it’s all creamy. Tweak the taste to your liking.
04 - Heat your grill, a grill pan, or skillet till it’s nice and hot. Drop the chicken skewers in and cook them, spinning them around now and then, till they get those char marks and are cooked all the way—a good 10 to 12 minutes.
05 - Get the chicken pieces and pop them in a large bowl with some olive oil, seasoned salt, and pepper. Pour in 60 ml of that honey buffalo sauce you made. Toss everything till it’s covered. Slide the chicken chunks onto your skewers.
06 - Grab a bowl and blend the honey with buffalo sauce or your favorite hot sauce. Stir until they’re mixed together.

# Notes:

01 - If you let the cooked chicken hang out for a couple of minutes before serving, it'll stay juicy and taste even better in your salad.
