Use a large cookie scoop to portion the dough onto a parchment or silicone-lined baking sheet. Roll each scoop of dough between your hands until smooth and rounded.

Bake for approximately 12 minutes or until the edges are lightly browned, and the tops are just set. Cool on the sheet for 1 minute, then transfer to a wire rack to cool completely.

Once the cookies are completely cool, place ⅓ cup of ice cream onto the flat side of one cookie. Top with a second cookie and press gently to spread the ice cream evenly.
