Process Oreo cookies in a food processor until fine crumbs form. Combine the crumbs with softened cream cheese and mix thoroughly until a smooth, even paste is formed.

Portion mixture into tablespoon-sized balls and roll between hands until smooth. If the mixture is very sticky, refrigerate for 15 minutes. Arrange balls on a baking sheet lined with parchment paper. Chill in the refrigerator for at least 1 hour, or freeze for 30 minutes.

Place chocolate chips and oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring after each time, until melted and smooth.

Using a fork or dipping tool, submerge each chilled Oreo ball in melted chocolate. Allow excess chocolate to drip off, then return to the parchment-lined sheet. While the coating is still wet, add sprinkles, extra Oreo crumbs, or drizzle additional melted chocolate, if desired.
