Pasta with Bacon (Print Version)

# Ingredients:

01 - 10 strips of bacon, chopped small.
02 - 1 pound spaghetti or linguine.
03 - 3 eggs, large size.
04 - 1 big egg yolk.
05 - 1 1/4 cups of finely grated parmesan cheese.
06 - 1 teaspoon freshly cracked black pepper.
07 - A pinch of salt for cooking water.
08 - Chopped fresh parsley for topping.

# Instructions:

01 - Cook bacon in a big pan over medium heat till crispy, about 8-10 minutes. Save 1 tablespoon of the fat.
02 - Mix eggs, egg yolk, saved bacon grease, parmesan, and black pepper together. Stir in 1/2 cup of hot pasta water.
03 - Boil pasta in salty water. Cook until a little firm to the bite (al dente) and save 1 cup of cooking water before draining.
04 - Toss warm pasta with the egg mixture off the heat, stirring quickly until creamy. Mix bacon in.
05 - Add extra pasta water if the texture's too thick. Sprinkle with parsley, parmesan, and more black pepper to serve.

# Notes:

01 - Don’t leave pasta in the pan too long or the eggs will scramble.
02 - Keep that pasta water for the sauce—it’s important!
03 - Best enjoyed right after making it.
