Cook bacon in a big pan over medium heat till crispy, about 8-10 minutes. Save 1 tablespoon of the fat.

Mix eggs, egg yolk, saved bacon grease, parmesan, and black pepper together. Stir in 1/2 cup of hot pasta water.

Boil pasta in salty water. Cook until a little firm to the bite (al dente) and save 1 cup of cooking water before draining.

Toss warm pasta with the egg mixture off the heat, stirring quickly until creamy. Mix bacon in.

Add extra pasta water if the texture's too thick. Sprinkle with parsley, parmesan, and more black pepper to serve.
