# Ingredients:

01 - 1 cup sugar, granulated
02 - 1/2 cup soft unsalted butter (room temp)
03 - 1/2 teaspoon of salt
04 - 2 eggs, large size
05 - 1 and 1/2 cups plain flour
06 - 1 teaspoon vanilla
07 - 1 teaspoon baking powder

08 - 1/2 cup sour cream for richness
09 - 1 cup drained crushed pineapple

10 - 2 tablespoons pineapple juice for a tropical hint
11 - 1/2 cup powdered sugar

# Instructions:

01 - Crank up your oven to 350°F (175°C). Coat your loaf tin with some grease and sprinkle it lightly with flour.
02 - Combine salt, baking powder, and flour in a medium-sized bowl. Mix them up thoroughly.
03 - Cream the butter and sugar using a mixer until it feels fluffy and light. This step makes the texture amazing!
04 - Add eggs one by one while mixing, then pour in your vanilla. Gradually alternate adding your dry mix and sour cream, starting and finishing with the dry. Don't overdo it—just mix until combined.
05 - Carefully fold the drained pineapple into the batter, put it in your pan, and bake for 50–60 minutes. Check with a toothpick to see if it's done.
06 - Once it’s fully cool, blend the powdered sugar and pineapple juice, then pour the mixture over the cake to create a sweet glaze.

# Notes:

01 - Drain the pineapple well or your cake could turn out too mushy.
02 - Room temperature ingredients mix much easier.
03 - When you add flour, don’t overmix to avoid a dense texture.
