Turn your oven to 350°F and let it get toasty. In the meantime, grab a baking tray and pop some parchment paper on it. Set it aside for now.

In a bowl that's medium-sized, stir together your dry cake mix and some baking powder until they're blended well.

Toss in those eggs and vanilla essence, and start mixing. Add the melted butter next, stirring until you’ve got a sticky dough.

Hand-mix those white chocolate chips in, making sure they're spread evenly in your beautiful pink dough.

Use a cookie scoop (about 1½ tablespoons) to grab bits of dough. Roll them gently into balls with your hands and line them up on the prepared baking sheet. Let them bake for 8-10 minutes, just until they look set.

While still warm, gently press a few extra white chocolate chips on top. Let the cookies sit on the tray for a couple of minutes, then move them to a wire rack to cool down completely.
