Pink Strawberry Cookies (Printable Version)

Light and pink strawberry cookies packed with white chocolate chips, made from cake mix. Ready in 25 minutes, ideal for any celebration or craving.

# What You'll Need:

→ Core Ingredients

01 - 1½ cups white chocolate chips (save extra for topping)
02 - ⅓ cup butter, melted
03 - 15.25 oz box of strawberry-flavored cake mix
04 - 2 large eggs
05 - ½ teaspoon of vanilla essence
06 - ½ teaspoon of baking powder

# Steps to Follow:

01 - Turn your oven to 350°F and let it get toasty. In the meantime, grab a baking tray and pop some parchment paper on it. Set it aside for now.
02 - In a bowl that's medium-sized, stir together your dry cake mix and some baking powder until they're blended well.
03 - Toss in those eggs and vanilla essence, and start mixing. Add the melted butter next, stirring until you’ve got a sticky dough.
04 - Hand-mix those white chocolate chips in, making sure they're spread evenly in your beautiful pink dough.
05 - Use a cookie scoop (about 1½ tablespoons) to grab bits of dough. Roll them gently into balls with your hands and line them up on the prepared baking sheet. Let them bake for 8-10 minutes, just until they look set.
06 - While still warm, gently press a few extra white chocolate chips on top. Let the cookies sit on the tray for a couple of minutes, then move them to a wire rack to cool down completely.

# Additional Notes:

01 - These will bake up soft and fluffy, not crunchy.
02 - If the dough feels too sticky, wet your hands a bit before rolling.
03 - Keep these in a sealed container for up to five days.
