Purple Soda Cupcakes (Print Version)

# Ingredients:

01 - 4 large egg whites, should be at room temp.
02 - 1/2 cup plain vegetable oil.
03 - 1 1/2 cups of your favorite grape soda.
04 - One box (15.25 oz) of white cake mix.
05 - One small packet (0.14 oz) of unsweetened grape drink mix powder.
06 - A few drops (about 4-6) of purple gel food dye.
07 - 1 cup (2 sticks) of salted butter, let it soften.
08 - 2 teaspoons vanilla extract (the pure kind).
09 - Just a pinch (1/4 teaspoon) of almond extract.
10 - 4 cups powdered sugar, sift thoroughly.
11 - 2 to 3 tablespoons of heavy cream.
12 - Optional: Sparkly purple sugar for decoration.

# Instructions:

01 - Set your oven to 350°F and line 24 muffin cups with paper liners.
02 - Whisk together the egg whites, oil, and grape soda in a mixing bowl until combined.
03 - On a low speed, blend the cake mix and grape powder into the wet mix until just smooth. Add some purple food dye if you like a bolder color.
04 - Scoop batter into muffin liners, filling them two-thirds full. Bake for 12-15 minutes, then let them cool fully on a rack.
05 - Cream the softened butter with both extracts until it’s light and fluffy (takes 1-2 minutes).
06 - Add the powdered sugar, one cup at a time, alternating with the cream. Beat until the texture’s smooth, then stir in purple dye.
07 - Pipe swirly frosting on each cool cupcake. Sprinkle with sparkly sugar if you want.

# Notes:

01 - Keep these in the fridge for up to 4 days or freeze for a month.
02 - They’re awesome as mini cupcakes! Just tweak the baking time down a bit.
03 - Any grape soda works fine for this recipe, no brand matters.
