Creamy salmon dinner (Print)

Get your salmon baked to perfection, topped with a cool mix of avocado and feta for a light yet filling meal ready in just under half an hour.

# Ingredients:

→ Salmon

01 - 4 boneless salmon fillets
02 - 2 tbsp olive oil
03 - 1 tsp grated lemon peel
04 - 2 tbsp freshly squeezed lemon juice
05 - 1 tsp chopped fresh dill
06 - Pinch of pepper and salt
07 - Sprinkle of paprika

→ Avocado-Feta Topping

08 - 1 avocado (cut into small cubes)
09 - 1/3 cup crumbled feta
10 - 1 tbsp chopped dill
11 - 1 tbsp thinly sliced chives
12 - Juice from half a lemon
13 - Salt and black pepper as needed

# Steps:

01 - Set oven to 400°F. Lightly coat a baking dish with non-stick spray.
02 - Toss together avocado cubes, crumbled feta, chopped chives, dill, lemon juice, and a bit of salt and pepper. Chill in the fridge.
03 - Dry salmon with paper towels and arrange in baking dish. Stir together olive oil, lemon juice, lemon peel, and dill, then spread over the fillets. Sprinkle on paprika, salt, and pepper.
04 - Bake for about 10-12 minutes or until the salmon flakes when tested with a fork.
05 - Top the baked salmon fillets with the chilled avocado-feta mixture and serve while hot.
