Shrimp Corn Bisque (Print Version)

# Ingredients:

→ Main Components

01 - 4 garlic cloves, minced
02 - 4 green onions, separate whites and greens
03 - ½ cup celery, chopped small
04 - 4 tablespoons of butter

→ Liquid & Dairy

05 - 1 cup heavy cream
06 - 2 cups milk (whole)
07 - ¼ cup plain flour

→ Seafood & Corn

08 - 1 ½ cups corn (use fresh or frozen)
09 - 15-ounce can of cream-style corn
10 - 1 pound of cleaned and peeled shrimp

→ Spices

11 - ½ teaspoon of salt
12 - ¼ teaspoon ground black pepper
13 - 2 teaspoons Old Bay spice blend

# Instructions:

01 - Heat butter in a big pot on medium, toss in celery with the white part of the onions and cook till they're soft. It'll take about 3 minutes.
02 - Mix in garlic, black pepper, and salt. Give it about a minute until the garlic smells just right.
03 - Dust some flour on those veggies while stirring. Turn off the heat, drop in the cream and milk, then crank the heat. Stir non-stop till it boils, then bring it down to a simmer.
04 - Add both types of corn into the simmering mixture. Let it cook gently for another 5 minutes so it all thickens up.
05 - Toss in shrimp with the Old Bay seasoning. It’ll take around 3 minutes for them to cook, turning pink. Scatter the green onion tops on before eating.

# Notes:

01 - Take off the heat before adding milk or cream to avoid curdling issues.
02 - For a thinner soup, splash in extra milk or let it simmer longer to thicken.
03 - Like it spicy? Shake in more Old Bay or a bit of your favorite hot sauce.
