Cream Cheese Sausage Balls (Print Version)

01 - 8 oz cream cheese, softened to room temp
02 - 1 lb uncooked spicy pork sausage
03 - 10 oz can of Rotel tomatoes with green chilies, liquid drained
04 - 1 1/2 cups of Bisquick pancake mix
05 - 2 cups of shredded cheese blend (Mexican style)
06 - 1/4 cup finely sliced green onion tops

# Instructions:

01 - Set the oven to 400°F and cover two baking trays with parchment sheets.
02 - Blend cream cheese using a hand mixer at medium speed until it’s fluffy and smooth.
03 - Add sausage and mix with your hands until nearly combined. Toss in Rotel, pancake mix, shredded cheese, and chopped onions, stirring gently to combine fully.
04 - Scoop mixture into walnut-sized balls (about 1 inch) and place them on the lined trays, leaving some space around each ball.
05 - Bake for 18 to 20 minutes, or until they’re golden and the inside hits 160°F.
06 - Let them sit a few minutes to cool slightly, then enjoy warm. Serve with dipping sauce if you like extras.

# Notes:

01 - Mix better by hand or on the lowest speed of a stand mixer.
02 - Overmixing can make them turn out too firm.
03 - Equal portions will ensure they cook evenly.
