Blend cream cheese using a hand mixer at medium speed until it’s fluffy and smooth.

Add sausage and mix with your hands until nearly combined. Toss in Rotel, pancake mix, shredded cheese, and chopped onions, stirring gently to combine fully.

Scoop mixture into walnut-sized balls (about 1 inch) and place them on the lined trays, leaving some space around each ball.

Bake for 18 to 20 minutes, or until they’re golden and the inside hits 160°F.
