Fiery Chicken Ramen (Print Version)

# Ingredients:

→ Main

01 - 2 packs of ramen noodles (toss those seasoning packets)
02 - 4 skinless, boneless chicken thighs

→ Sauce Base

03 - 1 cup chicken stock
04 - 2 tbsp soy sauce
05 - 1/2 cup full-fat cream
06 - 4 cloves of garlic, finely chopped

→ Seasonings

07 - 1/2 tsp garlic powder
08 - 1/4 tsp black pepper
09 - 1/4 tsp cayenne
10 - 1 tsp smoked paprika
11 - 1/2 tsp chili powder

→ Other

12 - 2 chopped green onions
13 - 2 tbsp of oil for cooking

# Instructions:

01 - Rub thighs with chili powder, cayenne, garlic powder, paprika, and pepper. Let sit for 15 minutes to soak up the flavors.
02 - Add oil to a warm skillet over medium-high heat. Sear thighs for 4-5 minutes on each side till golden brown. Rest meat and slice after removing from heat.
03 - Brown garlic in the same pan. Pour in broth and soy sauce, scraping up browned bits. Stir in the cream and simmer gently until it thickens up—about 5 minutes.
04 - Boil noodles, drain, and dish into bowls. Pour sauce over noodles, top with chicken slices, and sprinkle on green onions.

# Notes:

01 - Swap in sesame seeds or a jammy egg for extra toppings.
02 - Tone down the heat by using less cayenne.
03 - Keep leftovers in the fridge for up to 3 days.
