Spicy Egg Bites (Print Version)

# Ingredients:

01 - 12 eggs, large.
02 - 1/2 cup mayo.
03 - A couple tablespoons of finely chopped celery.
04 - A couple tablespoons of finely minced green bell pepper.
05 - 1 to 2 teaspoons of Cajun spice blend.
06 - 1 tablespoon of mustard, yellow.
07 - Onion powder, 1/2 teaspoon.
08 - Chopped green onions for topping.
09 - Some extra Cajun spice for sprinkling on top.

# Instructions:

01 - Pour cold water over eggs in a big pot. Heat until boiling. Once boiling, cover and turn off heat. Let the eggs sit for 12 minutes.
02 - Move the hot eggs into a bowl of icy water to cool them down fully. Peel them when they're not hot anymore.
03 - Slice eggs down the middle. Scoop yolks into a bowl and lay the whites on a serving dish.
04 - Blend the yolks, mayo, mustard, Cajun spices, celery, minced bell peppers, and onion powder until smooth and creamy.
05 - Spoon or pipe the filling into the hollowed-out egg whites. Sprinkle green onions and extra spice on top if you'd like.

01 - Make it up to a day in advance if needed.
02 - You can adjust the spices to fit your taste.
03 - Finely mince those veggies so the filling stays smooth!
