Pour cold water over eggs in a big pot. Heat until boiling. Once boiling, cover and turn off heat. Let the eggs sit for 12 minutes.

Move the hot eggs into a bowl of icy water to cool them down fully. Peel them when they're not hot anymore.

Slice eggs down the middle. Scoop yolks into a bowl and lay the whites on a serving dish.

Blend the yolks, mayo, mustard, Cajun spices, celery, minced bell peppers, and onion powder until smooth and creamy.

Spoon or pipe the filling into the hollowed-out egg whites. Sprinkle green onions and extra spice on top if you'd like.
