Sausage Spinach Soup (Printable Version)

Simple stew with seasoned sausage, soft potatoes, and fresh spinach in a creamy base.

# What You'll Need:

→ Base

01 - Garlic, freshly minced
02 - Onion, cut into small pieces
03 - Hot Italian sausage

→ Liquids

04 - Stock made from chicken
05 - Rich heavy cream
06 - Extra virgin olive oil

→ Vegetables

07 - Baby spinach, fresh bunch
08 - Potatoes chopped into small cubes

→ Seasonings

09 - Basil, dried flakes
10 - Bay leaf for flavor
11 - Crushed red pepper for a kick
12 - Oregano, dried and aromatic

# Steps to Follow:

01 - Break up the sausage into small pieces as it cooks in oil. Remove extra grease afterwards.
02 - Toss the garlic, onion, and herbs into the pot. Let the onions soften and turn see-through.
03 - Pour in broth, throw in the bay leaf and chunks of potato. Let everything softly bubble until the potatoes soften.
04 - Mix in spinach so it wilts, then stir in the thick cream.
