Street Corn Chicken Bowl (Print)

Juicy chicken, smoky corn, creamy cheese and lime all sit on fluffy rice.

# Ingredients:

→ Chicken essentials

01 - Boneless, skinless chicken thighs or breast, 4 pieces
02 - 1 tsp chili powder (swap for paprika if you like)
03 - Season to taste with salt and black pepper
04 - 1 tsp garlic powder (skip if you want)
05 - 2 tbsp avocado oil (olive oil’s fine too)
06 - 2 tbsp lime juice (lemon juice works too)

→ Tasty street corn layer

07 - Juice from 2 tbsp lime for bright flavor
08 - Lime wedges for serving
09 - Salt and black pepper to taste
10 - 1 tsp chili powder
11 - 60g crumbled cotija cheese (try feta or queso fresco)
12 - 60g mayonnaise
13 - 2 cups sweet corn, grilled if you can
14 - 60g sour cream (Greek yogurt is fine instead)
15 - 60g red onions, thinly sliced (optional)

→ Rice and final touches

16 - Fresh cilantro to sprinkle over the top if you like
17 - 4 cups cooked jasmine rice (white, brown, or cauliflower rice for low-carb)

# Steps:

01 - Grab a bowl and stir together corn, crumbled cotija, sour cream, mayo, sliced onion, chili powder, splash of lime juice, plus salt and pepper until it’s coated.
02 - Warm up your rice in a pan on low or just zap it in the microwave with a tiny bit of water to reheat.
03 - Let the chicken rest out of the pan for a minute, then chop it into bites or strips while it cools.
04 - Heat a skillet over medium. Sear the marinated chicken 8-10 min each side till golden and cooked through.
05 - Mix up avocado oil, lime juice, garlic powder, chili powder, plus a dash of salt and pepper in a bowl. Add in chicken and toss so it's coated well. Chill and let it soak at least 15-30 minutes.
06 - Ladle rice first, top with sliced chicken and street corn. Sprinkle extra cheese and cilantro, wedge a lime on the side.
07 - Right before eating, squeeze a fresh lime wedge all over your bowl.

# Notes:

01 - Toss in diced jalapeños or a pinch of cayenne for more heat in the corn mix.
02 - Trying to cut carbs? Swap in cauliflower rice for regular rice.
03 - Top it off with extras like pico de gallo, sliced radish, or avocado if you’re feeling fancy.
