Fill a big pot with water, about an inch above the carrots. Toss in the carrots, boil it, then reduce heat. Cover the pan and let it simmer for 8-10 minutes until they’re just soft but not mushy.

Remove the carrots from water and set them aside to cool for a bit.

In that same pot, melt the butter over medium heat. Stir in the brown sugar, salt, and pepper till smooth.

Pop the carrots back into the pot. Cook while stirring now and then for 5 minutes or until they're nicely coated with the glaze.

Sprinkle on some parsley if you like, then enjoy them fresh and warm.
