Sweet Potato Chicken Skillet (Print)

A fast and tasty skillet dish combining tender chicken with golden sweet potatoes, fresh herbs, and spices.

# Ingredients:

01 - 2 medium sweet potatoes, diced into 1-inch chunks.
02 - 1 pound chicken thighs or 2 chicken breasts.
03 - 3 garlic cloves, finely chopped.
04 - 1 medium onion, chopped small.
05 - 1 teaspoon ground cumin.
06 - 1 teaspoon paprika.
07 - 1/4 teaspoon crushed chili flakes.
08 - 1/2 teaspoon black pepper.
09 - 1 teaspoon salt.
10 - 1 teaspoon fresh rosemary or thyme.
11 - 2 tablespoons olive oil.
12 - 1 tablespoon lemon juice (optional).

# Steps:

01 - Dry the chicken, then sprinkle it with pepper, salt, cumin, and paprika.
02 - Brown the chicken in a pan for 4-5 minutes on each side till golden. Set it aside.
03 - Caramelize the sweet potatoes for 7-10 minutes, then toss in the onion and garlic for 2 more minutes.
04 - Add the chicken back to the pan along with the herbs. Cover and cook 5-7 minutes, making sure the chicken reaches 165°F inside.

# Notes:

01 - Sweet potato cubes should be uniform to cook evenly.
02 - Both chicken thighs and breasts work fine.
03 - Lemon juice isn't necessary but adds a lot of flavor.
