Set your oven to 425°F (220°C) and let it warm up.

For whole carrots, remove the skin and slice into even pieces so they cook the same.

Combine honey, melted butter, chopped garlic, salt, and pepper in a mixing bowl. Stir until smooth.

Spread the carrots on a pan, coat with the garlic honey mixture, and toss to cover them all evenly.

Place the coated carrots in a single layer on your baking tray.

Put the tray in the oven for 20–25 minutes. Stir halfway to make sure everything cooks evenly and gets caramelized.

Move carrots to a serving plate and sprinkle with parsley before serving (if you'd like).
