# Ingredients:

→ Main Ingredients

01 - 1 pound small potatoes, cut in half
02 - 1 1/2 pounds beef cut into stew-sized chunks
03 - 1/4 cup broth made from beef
04 - 3 garlic cloves, finely chopped
05 - 4 tablespoons melted, unsalted butter
06 - 1 tablespoon olive oil
07 - 1 teaspoon paprika with a smoky flavor
08 - 1 teaspoon onion seasoning
09 - 1/2 teaspoon dried rosemary leaves
10 - 1/2 teaspoon dried thyme
11 - 1/2 teaspoon salt (adjust as needed)
12 - 1/4 teaspoon black ground pepper

# Instructions:

01 - Grab a skillet, heat olive oil on medium-high, and brown the beef chunks on each side for about 2-3 minutes. Move them all into your slow cooker after they're browned.
02 - Throw the potato halves into the slow cooker along with the beef.
03 - In a small bowl, combine melted butter, smoked paprika, minced garlic, onion seasoning, thyme, rosemary, salt, and pepper. Drizzle this over everything in the slow cooker.
04 - Pour the beef broth right on top of the potatoes and meat in the slow cooker.
05 - Pop the lid on the slow cooker and let it work. Set it to low for 6-8 hours, or go for high heat for 3-4 hours. It'll be ready when the beef softens up and the potatoes are done.
06 - Spoon it into plates or bowls while warm. Sprinkle with parsley if that's your thing!

# Notes:

01 - For a creamier flavor, stir in some heavy cream during the last 30 minutes.
02 - Swap the baby potatoes for carrots or sweet potato chunks if you feel like switching it up.
03 - If you're in a rush, you can skip searing the beef—still delicious.
